Rosemary Sweet Potato Fries

Prep Time – 10 Minutes + 1 Hour Soaking Time      Cooking Time – 40 Minutes       Servings – 6


I’ve decided to share this recipe with all ya’ll because it is just too darn delicious to keep to myself. My family makes these sweet potato fries often because they are simple, delicious, healthy, and filling. They are great when serving as an appetizer, side, or even just a snack!

Ingredients 

  • – 2 Sweet Potatoes
  • – 2 Tbs. Olive Oil
  • – 1/2 tsp. Salt
  • – 1/2 tsp. Pepper
  • – 2 Tbs. Dried Rosemary

Directions

  1. – Preheat oven to 400°
  2. – Cut sweet potatoes into 1/2 inch strips
  3. – Soak sweet potatoes in water for 1 hour {This helps the potatoes cook all the way through without burning on the outside!}
  4. – Drain the potatoes and pat dry
  5. – Toss the potatoes in olive oil, salt, pepper, and rosemary until each piece appears evenly coated
  6. – Place potatoes evenly onto a greased or lined baking sheet
  7. – Cook the potatoes for 20 minutes. Flip and cook for another 20 minutes, or until they reach your preferred crunchy-ness!

Modifications & Time Saving Tips

  • The potatoes do not NEED to be soaked for one hour. Soak for as long as you can, but feel free to skip this step if you are tight on time. The potatoes will still turn out delicious, just not as crisp all the way through.
  • Coconut oil can be substituted for olive oil if you prefer!
  • Not in the mood for rosemary? Spice it up with paprika instead!
