Why is it that green beans are often banished from the dinner menu until the holidays roll around? It seems as though we make them for the great Thanksgiving feast, only to leave them in the dust for the remainder of the year. Well, both the delicious taste of green beans and their nutritious value should urge us to do otherwise. Green beans are said to have antioxidants, cardiovascular benefits, and even some anti-inflammatory perks, which is reason enough to dish up! And by delicious taste, I don’t mean a simple side of steamed green beans or a hefty helping from the can. The green bean recipe I am sharing today will be sure to secure a spot for them at your dinner table throughout the year.
Green Bean Ingredients –
- 1 pound green beans
- 2 tablespoons bacon grease
- 2 tablespoons minced garlic
- 1 yellow onion
- 1 cup chicken broth
- 1 pound bacon
- 1/4 cup toasted almonds
- 1/2 teaspoon salt
- 1/2 teaspoon black pepper
Green Bean Directions –
- Rinse and cut the ends of the green beans in small bunches with a large knife
- Heat bacon grease in a large skillet on medium heat
- Cook onion and garlic in the bacon grease for 1 minute
- Add green beans to the skillet and cook for 1 minute
- Pour chicken broth into the skillet and simmer on low. Keep the lid cracked so the liquid can escape
- Cook for 20 minutes or until all of the liquid has evaporated
- While the green beans are cooking, fry the bacon and toast the almonds
- Once the bacon is cooked, chop it into small pieces
- When all the liquid has evaporated from the green beans, allow the onion and green beans to caramelize together for 1 minute
- Pour green beans, bacon, and toasted almonds into a serving dish and enjoy!
Modifications & Time Saving Tips
- Vegetable oil, olive oil, coconut oil, or butter may be used to substitute bacon grease
- Buy pre-cut green beans to save on prep time
